


Paleo
What is Paleo? A diet based on foods that were presumably eaten during primitive time like meat, fruits, and vegetables, EXCLUDING grains, dairy, and processed foods. The recipes I use or create do not contain gluten, grains, dairy, processed oils, soy, and refined sugars.

Gluten-Free
Paleo is gluten-free and grain-free. When baking, I prefer to use grain-free flours like Almond Flour, Coconut Flour, Cassava Flour. Most of these flours are nut-based except for Cassava. When clients ask me for nut-free desserts, I choose to use Cassava (100% Paleo) or Gluten-Free All-Purpose Flour (not Paleo).
*Do not be fooled by the Gluten-Free label in grocery stores or some bakeries. Gluten-Free means no wheat but can contain grains and lots of added refined sugars to deepen the taste.

Dairy-Free
ALL my desserts are dairy-free. What does that mean? Dairy-free is 100% vegan, casein, whey, and lactose free.
*Do not be fooled. If something reads Lactose-Free, that does not mean Dairy-Free.

Refined Sugar-Free
My desserts/baked goods DO NOT have any refined sugars. I prefer to use the natural sugars from the fruit to give it sweetness. Organic Maple Syrup or Organic Raw Honey are used in some of my recipes as well as Coconut Sugar.
